Angus Beef Steak with Garlic & Herb Butter

Ingredients:

2 Angus beef steaks (ribeye, sirloin, or filet mignon)
Salt and freshly ground black pepper, to taste
2 tablespoons olive oil
2 tablespoons unsalted butter
4 cloves garlic, minced
1 tablespoon fresh thyme, chopped
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh parsley, chopped
1 tablespoon lemon juice

Directions:

Season the Steaks:

Pat the steaks dry with paper towels and season generously with salt and freshly ground black pepper on both sides. Let them sit at room temperature for 20-30 minutes.

Make the Garlic & Herb Butter:

In a small bowl, mix the softened butter, minced garlic, chopped thyme, rosemary, parsley, and lemon juice. Set aside.

Sear the Steaks:

Heat olive oil in a large cast-iron skillet or grill pan over medium-high heat. When the oil is hot and shimmering, place the steaks in the pan.
Sear the steaks for 3-4 minutes on each side for medium-rare, or adjust the cooking time to your desired doneness.

Baste with Herb Butter:

During the last minute of cooking, add a tablespoon of the garlic and herb butter to the pan. Tilt the pan slightly and spoon the melted butter over the steaks to baste them for extra flavor.

Rest and Serve:

Remove the steaks from the pan and let them rest for 5-10 minutes, loosely covered with foil. Serve the steaks topped with a generous dollop of the remaining garlic and herb butter.
