Niçoise Salad
Ingredients:
2 cups mixed salad greens
1/2 cup cherry tomatoes, halved
1/4 cup black olives, pitted and sliced
1/4 cup green beans, trimmed and blanched
1/4 cup red onion, thinly sliced
2 hard-boiled eggs, quartered
1 can (5 ounces) tuna in olive oil, drained
1/2 cup cooked potatoes, diced
1/4 cup extra-virgin olive oil
2 tablespoons red wine vinegar
1 teaspoon Dijon mustard
Salt and pepper, to taste
Fresh basil, for garnish
Directions:
Prepare the Ingredients:
In a large bowl, combine the salad greens, cherry tomatoes, olives, green beans, red onion, and potatoes.
Make the Dressing:
In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper until emulsified.
Assemble the Salad:
Arrange the tuna and hard-boiled egg quarters on top of the salad mixture. Drizzle with the prepared dressing and gently toss to combine.
Garnish and Serve:
Garnish with fresh basil leaves and serve immediately.
