BBQ Roasted Peameal Bacon Sandwich Stack
Ingredients:
4 slices peameal bacon (also known as Canadian bacon)
4 slices of crusty bread or a bun
1 tablespoon butter
4 slices of tomato
4 leaves of lettuce
2 tablespoons mayonnaise
1 tablespoon Dijon mustard
Salt and pepper to taste
Pickles (optional)
Directions:
Cook the Bacon:
Heat a skillet or griddle over medium heat.
Place the peameal bacon slices in the skillet and cook until they are golden brown and crispy, about 4-5 minutes per side.
Remove the bacon from the skillet and set aside.
Toast the Bread:
While the bacon is cooking, spread butter on one side of each slice of bread.
Toast the bread in the same skillet or griddle until golden brown and crispy, about 2 minutes per side.
Prepare the Condiments:
In a small bowl, mix together the mayonnaise and Dijon mustard. Season with salt and pepper to taste.
Assemble the Sandwich:
Spread a layer of the mayonnaise-mustard mixture on the non-buttered side of each slice of toasted bread.
On two of the slices, layer the cooked peameal bacon, tomato slices, and lettuce.
Top with the remaining slices of bread, mayonnaise side down.
Serve:
Cut the sandwiches in half if desired, and serve immediately with pickles on the side if you like.
