Strawberry Bread recipe

Strawberry Bread recipe that’s perfect for a sweet breakfast or a light dessert!

Ingredients:

2 cups all-purpose flour
1 cup sugar
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
2 large eggs
1/2 cup vegetable oil (or melted butter)
1/2 cup plain yogurt (or sour cream)
1 tsp vanilla extract
1 1/2 cups fresh strawberries (diced)
1/2 cup chopped nuts (optional, like walnuts or pecans)
For the Glaze (optional):
1 cup powdered sugar
2 tbsp milk or lemon juice
1/2 tsp vanilla extract

Instructions:

  1. Preheat the oven:
    Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line it with parchment paper for easy removal.
  2. Prepare the dry ingredients:
    In a large bowl, whisk together the flour, sugar, baking soda, baking powder, and salt.
  3. Prepare the wet ingredients:
    In a separate bowl, whisk together the eggs, oil, yogurt, and vanilla extract until smooth.
  4. Combine the wet and dry ingredients:
    Pour the wet ingredients into the dry ingredients and stir until just combined (do not overmix). Gently fold in the diced strawberries and nuts (if using).
  5. Bake:
    Pour the batter into the prepared loaf pan and spread it evenly. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. If the top is browning too quickly, cover it loosely with aluminum foil.
  6. Cool:
    Let the strawberry bread cool in the pan for 10-15 minutes, then transfer it to a wire rack to cool completely.
  7. Optional glaze:
    While the bread cools, prepare the glaze by whisking together the powdered sugar, milk (or lemon juice), and vanilla extract until smooth. Drizzle the glaze over the cooled bread.
