Gazpacho Andaluz 🍅
El gazpacho andaluz es, indudablemente, uno de los platos más típicos de la cocina española.
Ingredients:
6 ripe tomatoes, cored and chopped
1 cucumber, peeled and chopped
1 red bell pepper, chopped
1 small red onion, chopped
2 cloves garlic, minced
3 tablespoons olive oil
2 tablespoons red wine vinegar
1 tablespoon lemon juice
2 cups cold water
Salt and pepper to taste
Fresh basil or parsley, chopped (for garnish)
Croutons (optional for serving)
Directions:
In a blender or food processor, combine the tomatoes, cucumber, red bell pepper, red onion, and garlic. Blend until smooth.
Add the olive oil, red wine vinegar, lemon juice, and cold water to the mixture. Blend again until well combined.
Season with salt and pepper to taste, and blend one more time to ensure the flavors are well mixed.
Transfer the gazpacho to a large bowl or pitcher and refrigerate for at least 2 hours, allowing the flavors to meld and the soup to chill thoroughly.
Serve the gazpacho cold, garnished with fresh basil or parsley and croutons if desired.
