Croquetas 🟤
Ingredients:
2 tablespoons olive oil
1/2 cup finely chopped onion
1/2 cup finely chopped ham (or chicken, if preferred)
1/4 cup all-purpose flour
2 cups milk
1/4 teaspoon nutmeg
Salt and black pepper, to taste
1 cup breadcrumbs
2 large eggs, beaten
Vegetable oil, for frying
Directions:
Heat olive oil in a skillet over medium heat. Add the onion and cook until translucent, about 3 minutes.
Stir in the ham and cook for another 2 minutes.
Sprinkle the flour over the mixture and cook for 1-2 minutes, stirring constantly, to form a roux.
Gradually whisk in the milk and continue to cook, stirring frequently, until the mixture thickens and forms a smooth bechamel sauce.
Season with nutmeg, salt, and black pepper. Transfer the mixture to a bowl and let cool to room temperature.
Once cooled, shape the mixture into small cylinders or balls.
Set up a breading station: one bowl with breadcrumbs, one with beaten eggs.
Dip each croqueta into the egg, then coat with breadcrumbs.
Heat vegetable oil in a deep frying pan or pot to 350°F (175°C).
Fry the croquetas in batches until golden brown and crispy, about 3-4 minutes per batch. Drain on paper towels.
