Hasselback Potatoes with Sausage and Chorizo Topped with Melted Cheese

Hasselback Potatoes recipe

Hasselback potatoes are awesome! Soft on the inside and crispy on the outside, basted with garlic rosemary olive oil. This is roast potato perfection!

Ingredients (for 4 servings):

4 large potatoes (Russet or Yukon Gold work well)
2 sausages (Italian or any of your choice, sliced)
100g chorizo (sliced)
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon smoked paprika
Salt and pepper to taste
1 ½ cups shredded cheese (Gruyère, cheddar, or mozzarella for melting)
2 tablespoons butter (melted)
Fresh parsley (chopped, for garnish)

Instructions:

  1. Preheat the Oven:
    Preheat your oven to 400°F (200°C).
  2. Prepare the Potatoes:
    Wash and scrub the potatoes well, leaving the skins on.
    Using a sharp knife, make thin slices across the top of each potato, about ⅛-inch apart, being careful not to cut all the way through the potato. You can place chopsticks or wooden spoons on either side of the potato to prevent cutting through.
  3. Season the Potatoes:
    In a small bowl, mix the olive oil, garlic powder, smoked paprika, salt, and pepper.
    Brush the potatoes with the seasoned olive oil, making sure it gets into the slits.
    Place the potatoes on a baking sheet lined with parchment paper and bake for 40-45 minutes, until they are crispy on the outside and tender on the inside.
  4. Cook the Sausage and Chorizo:
    While the potatoes are baking, heat a skillet over medium heat.
    Add the sausage and chorizo slices and cook until browned and crispy, about 5-7 minutes. Set aside.
  5. Add the Sausage and Cheese:
    Once the potatoes are done, remove them from the oven.
    Tuck the cooked sausage and chorizo slices into the slits of the potatoes.
    Drizzle the melted butter over the potatoes.
    Generously sprinkle the shredded cheese over the top of each potato.
  6. Melt the Cheese:
    Return the potatoes to the oven for an additional 10-15 minutes, or until the cheese is fully melted and bubbly.
  7. Serve:
    Remove the potatoes from the oven and sprinkle them with chopped parsley for a fresh touch.
    Serve hot as a hearty main dish or side.
