Ingredients:
2 pounds ground reindeer meat
1/2 pound pork fat, finely diced
1/4 cup ice water
1 tablespoon salt
1 tablespoon black pepper
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon dried thyme
1/2 teaspoon dried sage
1/4 teaspoon crushed red pepper flakes (optional for heat)a
Sausage casings (hog or collagen), soaked and rinsed
Directions:
In a large bowl, combine the ground reindeer meat and diced pork fat. Mix well.
Add the ice water, salt, black pepper, smoked paprika, garlic powder, onion powder, thyme, sage, and crushed red pepper flakes (if using) to the meat mixture. Mix until all ingredients are evenly distributed and the mixture becomes slightly sticky.
Rinse the sausage casings thoroughly and soak in cold water for about 30 minutes. Drain and rinse again.
Stuff the sausage casings with the meat mixture, making sure to pack it tightly and avoid air bubbles. Twist the sausages into 6-inch links and tie the ends securely with kitchen twine.
Prick the sausages with a needle or pin to remove any trapped air bubbles.
Preheat your grill or smoker to medium heat. Cook the sausages for about 15-20 minutes, turning occasionally, until they are well-browned and have reached an internal temperature of 160°F (71°C).
Let the sausages rest for a few minutes before slicing and serving.
