Flavorful Cajun Shrimp Scampi 🍤🔥
Ingredients:
1 lb (450g) large shrimp, peeled and deveined
2 tablespoons Cajun seasoning
4 tablespoons unsalted butter, divided
4 cloves garlic, minced
1/4 teaspoon red pepper flakes (optional)
1/2 cup white wine or chicken broth
1 tablespoon lemon juice
1/4 cup fresh parsley, chopped
Salt and pepper to taste
8 oz (225g) linguine or your choice of pasta
Lemon wedges, for serving
Directions:
Cook the pasta according to package instructions until al dente. Drain and set aside.
In a large skillet, melt 2 tablespoons of butter over medium heat. Add the shrimp and Cajun seasoning, cooking for 2-3 minutes on each side until the shrimp is opaque and cooked through. Remove the shrimp from the skillet and set aside.
In the same skillet, melt the remaining 2 tablespoons of butter. Add the minced garlic and red pepper flakes, sautéing for 1 minute until fragrant.
Pour in the white wine or chicken broth and lemon juice, stirring to deglaze the pan. Let the sauce simmer for 2-3 minutes, reducing slightly.
Return the shrimp to the skillet and toss to coat in the sauce. Add the cooked pasta and toss until evenly coated.
Season with salt, pepper, and additional Cajun seasoning to taste. Sprinkle with fresh parsley before serving.
Serve hot with lemon wedges on the side.
