Flavorful Cajun Shrimp Loaded Baked Potato
Ingredients:
4 large russet potatoes
1 lb large shrimp, peeled and deveined
2 tablespoons Cajun seasoning
1 tablespoon olive oil
4 slices of bacon, cooked and crumbled
1/2 cup shredded cheddar cheese
1/2 cup sour cream
1/4 cup chopped green onions
2 tablespoons butter
Salt and pepper to taste
Directions:
Preheat the oven to 400°F (200°C). Scrub the potatoes, then pierce each with a fork several times. Place them directly on the oven rack and bake for 50-60 minutes, or until tender.
While the potatoes are baking, toss the shrimp with Cajun seasoning. Heat olive oil in a skillet over medium-high heat, then add the shrimp. Cook for 2-3 minutes per side until the shrimp are pink and cooked through. Set aside.
Once the potatoes are done, carefully slice them open lengthwise. Use a fork to fluff the insides.
Add butter, sour cream, shredded cheddar cheese, and half of the crumbled bacon into the fluffed potato. Mix slightly within the potato skin.
Top each potato with the cooked Cajun shrimp, remaining bacon, and a sprinkle of green onions.
Serve immediately, garnished with extra cheese or sour cream if desired.
