BLT Macaroni Salad 🥓🍅🥗
Ingredients:
2 cups macaroni pasta
8 slices bacon, cooked and crumbled
1 1/2 cups cherry tomatoes, halved
1 cup lettuce, chopped
1/2 cup mayonnaise
1/4 cup sour cream
1 tablespoon apple cider vinegar
1 teaspoon Dijon mustard
Salt and freshly ground black pepper, to taste
Fresh parsley for garnish (optional)
Directions:
Cook the Pasta: In a large pot of boiling salted water, cook the macaroni pasta according to package instructions. Drain and rinse with cold water to cool.
Prepare the Dressing: In a large mixing bowl, whisk together the mayonnaise, sour cream, apple cider vinegar, and Dijon mustard until smooth. Season with salt and freshly ground black pepper to taste.
Assemble the Salad: Add the cooked macaroni, crumbled bacon, cherry tomatoes, and chopped lettuce to the dressing. Toss everything together until well coated.
Chill: Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
Serve: Before serving, give the salad a quick toss, and garnish with fresh parsley if desired.
