Bang Bang Shrimp Pasta
Ingredients:
8 oz. linguine or spaghetti
1 lb. shrimp, peeled and deveined
2 tablespoons olive oil
1/2 cup mayonnaise
1/4 cup sweet chili sauce
2 tablespoons Sriracha sauce
2 cloves garlic, minced
1 tablespoon lime juice
Salt and pepper to taste
Fresh parsley or green onions, chopped (for garnish)
Directions:
Cook the Pasta: In a large pot of boiling salted water, cook the pasta according to package instructions. Drain and set aside.
Cook the Shrimp: While the pasta is cooking, heat olive oil in a large skillet over medium-high heat. Season the shrimp with salt and pepper, and cook until pink and opaque, about 2-3 minutes per side. Remove from heat and set aside.
Make the Bang Bang Sauce: In a mixing bowl, whisk together the mayonnaise, sweet chili sauce, Sriracha, minced garlic, and lime juice until smooth and well combined.
Combine: Toss the cooked pasta with the Bang Bang sauce until evenly coated. Add the cooked shrimp and toss gently to combine.
Serve: Divide the pasta among plates and garnish with chopped parsley or green onions. Serve immediately.
