Easy Salmon Skewers with Chimichurri Sauce

These delicious salmon kebabs are grilled to perfection, then topped with a garlicky chimichurri sauce. They’re truly the perfect summer dish!

Easy Salmon Skewers with Chimichurri Sauce

Ingredients:

1 lb salmon fillets, cut into cubes
1 red bell pepper, cut into chunks
1 yellow bell pepper, cut into chunks
1 red onion, cut into chunks
2 tablespoons olive oil
Salt and pepper to taste
Skewers (if using wooden skewers, soak them in water for 30 minutes)

For the Chimichurri Sauce:

1 cup fresh parsley, finely chopped
1/4 cup fresh cilantro, finely chopped
3 garlic cloves, minced
1/4 cup red wine vinegar
1/2 cup olive oil
1/2 teaspoon red pepper flakes (optional)
Salt and pepper to taste

Directions:

Prepare the Skewers: Preheat your grill or grill pan over medium-high heat. Thread the salmon cubes, red and yellow bell peppers, and red onion onto the skewers, alternating them.

Season: Drizzle the skewers with olive oil and season with salt and pepper.

Grill:

Place the skewers on the grill and cook for 8-10 minutes, turning occasionally, until the salmon is cooked through and the vegetables are tender and slightly charred.

Make the Chimichurri Sauce: While the skewers are grilling, combine the parsley, cilantro, garlic, red wine vinegar, olive oil, red pepper flakes, salt, and pepper in a bowl. Mix well.

Serve: Drizzle the chimichurri sauce over the grilled salmon skewers or serve it on the side as a dipping sauce.
