Enjoy this light and refreshing Crab Salad as a main dish or a side. Perfect for a summer meal or an elegant appetizer!

Ingredients:

1 pound crab meat (lump or imitation)
1/2 cup mayonnaise
1 tablespoon Dijon mustard
1 tablespoon fresh lemon juice
1/4 cup finely chopped celery
1/4 cup finely chopped red onion
1 tablespoon fresh parsley, chopped
1 tablespoon fresh dill, chopped
Salt and freshly ground black pepper, to taste
Mixed greens or lettuce leaves, for serving
Lemon wedges, for garnish

Directions:

In a large bowl, combine the mayonnaise, Dijon mustard, and lemon juice. Mix well until smooth and creamy.
Gently fold in the crab meat, celery, red onion, parsley, and dill. Be careful not to break up the crab meat too much.
Season with salt and freshly ground black pepper to taste. Adjust seasoning as needed.
Cover and refrigerate the salad for at least 30 minutes to allow the flavors to meld together.
Serve the crab salad over a bed of mixed greens or lettuce leaves. Garnish with lemon wedges for an extra burst of citrus flavor.
