Ingredients:
1 ½ cups graham cracker crumbs
½ cup unsweetened shredded coconut
½ cup melted coconut oil
2 cups cream cheese, softened
1 cup powdered sugar
1 cup coconut cream
1/4 cup fresh lemon juice
Zest of 1 lemon
1 teaspoon vanilla extract
Pinch of salt
Directions:
In a bowl, combine the graham cracker crumbs and shredded coconut. Add the melted coconut oil and mix until well combined.
Press the mixture firmly into the bottom of a lined 9×9-inch baking pan to form the crust. Place in the refrigerator to set while preparing the filling.
In a large mixing bowl, beat the softened cream cheese until smooth.
Gradually add the powdered sugar, coconut cream, lemon juice, lemon zest, vanilla extract, and salt. Mix until creamy and fully combined.
Pour the cheesecake filling over the chilled crust and spread evenly.
Cover and refrigerate for at least 4 hours or until firm.
Once set, cut into bars and garnish with extra shredded coconut or lemon zest if desired.
