Cheesy Bacon Ranch Potato Salad Recipe
Ingredients:
2 pounds baby potatoes, halved
1 cup shredded cheddar cheese
1/2 cup cooked bacon, chopped
1/2 cup ranch dressing
1/4 cup sour cream
1/4 cup green onions, sliced
1 tablespoon Dijon mustard
Salt and pepper to taste
Fresh parsley for garnish (optional)
Directions:
Boil the halved baby potatoes in salted water until fork-tender, about 15-20 minutes. Drain and let cool.
In a large mixing bowl, combine the ranch dressing, sour cream, and Dijon mustard. Mix well.
Add the cooled potatoes to the dressing mixture and gently stir to coat.
Fold in the shredded cheddar cheese, chopped bacon, and sliced green onions. Season with salt and pepper to taste.
Cover and refrigerate for at least 1 hour to allow flavors to meld.
Before serving, garnish with fresh parsley if desired.
