Tropical Pineapple Dream Cheesecake

Ingredients:

1 ½ cups graham cracker crumbs
½ cup unsalted butter, melted
2 cups cream cheese, softened
1 cup granulated sugar
1 teaspoon vanilla extract
1 cup crushed pineapple, drained
1 cup heavy whipping cream
½ cup powdered sugar
Pineapple slices and toasted coconut for garnish (optional)

Directions:

Preheat the oven to 325°F (160°C). In a bowl, combine the graham cracker crumbs and melted butter. Press this mixture into the bottom of a 9-inch springform pan to form the crust.
In a large mixing bowl, beat the softened cream cheese and granulated sugar until smooth. Add the vanilla extract and mix until combined.
Gently fold in the crushed pineapple until evenly distributed.
Pour the cream cheese mixture over the prepared crust and smooth the top. Bake for 50-60 minutes, or until the center is set and the edges are slightly golden.
Let the cheesecake cool at room temperature for 1 hour, then refrigerate for at least 4 hours or overnight.
Before serving, whip the heavy cream with the powdered sugar until soft peaks form. Spread or pipe the whipped cream over the top of the chilled cheesecake.
Garnish with pineapple slices and toasted coconut if desired.
