Mini Meatloaf Muffins

These Mini Meatloaf Muffins are the perfect bite-sized comfort food! Easy to make and full of flavor! 😍🍽️

Ingredients:

1 lb ground beef

½ cup breadcrumbs

1 egg, beaten

½ cup grated Parmesan cheese

¼ cup milk

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon Worcestershire sauce

1 tablespoon ketchup

1 teaspoon salt

½ teaspoon black pepper

½ cup ketchup (for topping)

1 tablespoon brown sugar (for topping)

1 teaspoon mustard (for topping)

Directions:

Preheat the oven to 375°F (190°C). Grease a 12-cup muffin tin.

In a large bowl, combine the ground beef, breadcrumbs, egg, Parmesan cheese, milk, onion, garlic, Worcestershire sauce, ketchup, salt, and pepper. Mix until well combined.

Divide the mixture evenly among the muffin cups, pressing it down to fill each one.

In a small bowl, mix the ketchup, brown sugar, and mustard for the topping. Spoon a small amount over each meatloaf muffin.

Bake in the preheated oven for 20-25 minutes, or until the meatloaf is cooked through and the topping is caramelized.

Let cool slightly before removing from the muffin tin. Serve hot.
