Mashed potatoes with cheese
Ingredients:
2 lbs potatoes (Yukon Gold or Russet)
½ cup butter
1 cup milk (or heavy cream)
1 cup shredded cheddar cheese
½ cup Parmesan cheese, grated
Salt and pepper to taste
2 cloves garlic, minced (optional)
Fresh parsley, chopped (for garnish)
Directions:
Prepare the Potatoes:
Peel and chop the potatoes into even-sized chunks. Place them in a large pot and cover with cold water. Add a pinch of salt and bring to a boil.
Cook the potatoes for about 15-20 minutes, or until they are fork-tender.
Mash the Potatoes:
Drain the potatoes and return them to the pot. Add butter and mash the potatoes using a potato masher or an electric mixer.
Gradually add the milk (or cream) while continuing to mash, until the potatoes are smooth and creamy.
Add the Cheese:
Stir in the shredded cheddar cheese and Parmesan until melted and well combined. Season with salt and pepper to taste.
If using garlic, sauté it in a small pan with a bit of butter and add to the potatoes.
Serve:
Garnish with chopped fresh parsley and serve hot. These cheesy mashed potatoes are perfect as a side dish for any meal.
