White Chocolate Raspberry Cookies
Ingredients:
2 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar, packed
1 large egg
2 teaspoons vanilla extract
1 cup white chocolate chips
1/2 cup freeze-dried raspberries, crushed
1 tablespoon milk
Directions:
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a medium bowl, whisk together flour, baking soda, and salt.
In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Add the egg and vanilla extract, beating until well combined.
Gradually mix in the dry ingredients, followed by the milk. Stir in the white chocolate chips and crushed freeze-dried raspberries.
Drop rounded tablespoons of dough onto the prepared baking sheet.
Bake for 10-12 minutes, or until the edges are lightly golden. Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
