Seared Scallop Piccata 🍋🦑
Ingredients:
12 large sea scallops
2 tablespoons olive oil
2 tablespoons butter
2 cloves garlic, minced
1/3 cup white wine
2 tablespoons fresh lemon juice
1/4 cup capers, drained
1/2 cup chicken broth
2 tablespoons parsley, chopped
Salt and pepper to taste
Directions:
Pat the scallops dry with paper towels and season with salt and pepper.
Heat olive oil in a large skillet over medium-high heat.
Sear the scallops for 2-3 minutes per side, until golden brown. Remove from the skillet and set aside.
In the same skillet, add butter and garlic. Sauté for 1 minute.
Pour in the white wine, lemon juice, and chicken broth. Simmer for 2-3 minutes, allowing the sauce to reduce.
Stir in the capers and parsley.
Return the scallops to the skillet, spooning the sauce over them.
Cook for another minute to heat through, then serve.
