Kansas City Burnt Ends

Ingredients:

5 lbs beef brisket (point cut preferred)
1 cup barbecue rub
2 cups barbecue sauce
1/4 cup brown sugar
2 tablespoons butter, melted
1/4 cup apple cider vinegar

Directions:

Preheat your smoker to 250°F (120°C). Generously rub the beef brisket with the barbecue rub, ensuring all sides are well-coated.
Place the brisket in the smoker, fat side up, and smoke for 6-8 hours or until the internal temperature reaches 190°F (88°C).
Remove the brisket from the smoker and let it rest for 15 minutes. Then, slice the point section into 1-inch cubes.
Toss the brisket cubes with barbecue sauce, brown sugar, melted butter, and apple cider vinegar.
Place the sauced brisket cubes back into the smoker for an additional 1-2 hours, or until the cubes are caramelized and crispy on the outside.
Serve the burnt ends hot, drizzled with extra barbecue sauce, and enjoy!
