Grilled Chicken Thigh Fillet
Ingredients:
6 boneless, skinless chicken thigh fillets
3 tablespoons olive oil
2 tablespoons soy sauce
1 tablespoon honey
1 tablespoon lemon juice
3 cloves garlic, minced
1 teaspoon smoked paprika
1 teaspoon dried thyme
Salt and pepper, to taste
Directions:
In a large bowl, whisk together olive oil, soy sauce, honey, lemon juice, garlic, paprika, thyme, salt, and pepper to make the marinade.
Add the chicken thigh fillets to the bowl and toss to ensure they are fully coated. Cover and marinate in the fridge for at least 1 hour (or up to 8 hours for richer flavor).
Preheat your grill to medium-high heat.
Grill the chicken thigh fillets for about 5-7 minutes per side, or until the internal temperature reaches 165°F (75°C).
Remove from the grill and let the chicken rest for 5 minutes before serving.
