Ingredients:
8 slices rye bread
1 lb corned beef, thinly sliced
8 slices Swiss cheese
1 cup sauerkraut, drained
1/4 cup Thousand Island dressing
2 tbsp butter, softened
Directions:
Preheat Pan or Griddle: Heat a large skillet or griddle over medium heat.
Assemble Sandwiches: Spread butter on one side of each slice of bread. On the non-buttered side, spread a layer of Thousand Island dressing. Top with a slice of Swiss cheese, corned beef, sauerkraut, and another slice of Swiss cheese. Close the sandwich with another slice of bread, butter side out.
Cook the Sandwiches: Place sandwiches butter-side down on the hot skillet. Cook for 3-4 minutes on each side, until the bread is golden brown and the cheese is melted.
Serve: Remove from heat, cut in half, and serve hot!
