Ingredients:

10 lb corned ham, bone-in
1 large head of cabbage, chopped
2 bunches of kale, chopped
2 medium onions, finely chopped
1 tablespoon crushed red pepper flakes
2 tablespoons black pepper
1 tablespoon mustard seed
1 tablespoon celery seed
1 teaspoon salt
Cheesecloth for wrapping
Butcher’s twine for securing

Directions:

Prepare the ham: Score the surface of the corned ham and make several deep cuts into the meat, creating pockets for the stuffing mixture. Be sure to make incisions deep enough to allow stuffing to fill the ham.

Make the stuffing: In a large bowl, mix the chopped cabbage, kale, onions, crushed red pepper, black pepper, mustard seed, celery seed, and salt until well combined.

Stuff the ham: Pack the stuffing mixture tightly into the slits and pockets you made in the ham. If you have any leftover stuffing, reserve it for later.

Wrap the ham: Place the stuffed ham in a large piece of cheesecloth, wrapping it tightly. Secure the cheesecloth with butcher’s twine, ensuring that the ham is fully enclosed and the stuffing stays in place during cooking.

Boil the ham: Place the wrapped ham into a large stockpot and cover it with water. Bring the water to a boil, then reduce the heat to a simmer. Cook the ham for about 20 minutes per pound (approximately 3-4 hours for a 10 lb ham). Replenish the water as needed to keep the ham fully submerged.

Cool and serve: Once the ham is fully cooked, remove it from the pot and allow it to cool slightly before unwrapping. Slice the ham and serve with the remaining stuffing on the side.
