Skewers Surf & Turf Meets Chimichurri

Ingredients:


1 lb sirloin steak, cut into 1-inch cubes
1 lb large shrimp, peeled and deveined
2 tablespoons olive oil1 teaspoon smoked paprika
1 teaspoon garlic powder
Salt and pepper to taste
Wooden or metal skewers

For Chimichurri Sauce:

1/2 cup fresh parsley, finely chopped
1/4 cup fresh cilantro, finely chopped
3 cloves garlic, minced
1/4 cup red wine vinegar
1/2 cup olive oil
1 teaspoon red pepper flakes
Salt and pepper to taste

Directions:

Prepare the Chimichurri Sauce: In a small bowl, mix together the chopped parsley, cilantro, minced garlic, red wine vinegar, olive oil, red pepper flakes, salt, and pepper. Stir well and set aside to let the flavors combine while you prepare the skewers.

Marinate the Steak and Shrimp: In a large bowl, toss the steak cubes and shrimp with olive oil, smoked paprika, garlic powder, salt, and pepper. Let it marinate for 15-20 minutes to absorb the flavors.

Assemble the Skewers: Thread the marinated steak cubes and shrimp alternately onto the skewers, making sure each skewer has an even mix of beef and shrimp.

Grill the Skewers: Preheat your grill to medium-high heat. Grill the skewers for 3-4 minutes on each side until the shrimp are pink and the steak is cooked to your desired level of doneness (medium-rare, medium, etc.).

Serve with Chimichurri: Once the skewers are grilled to perfection, drizzle the fresh chimichurri sauce over the skewers and serve immediately.
