Shrimp Scampi π¦π
Ingredients:
1 lb large shrimp, peeled and deveined
4 tablespoons unsalted butter
3 tablespoons olive oil
4 cloves garlic, minced
1/2 cup dry white wine
1/4 cup fresh lemon juice
1/4 teaspoon crushed red pepper flakes (optional)
Salt and pepper to taste
1/4 cup fresh parsley, chopped
Lemon wedges, for garnish
Cooked pasta or crusty bread, for serving
Directions:
SautΓ© the Shrimp: In a large skillet over medium-high heat, melt 2 tablespoons of butter with the olive oil. Add the shrimp, season with salt and pepper, and cook for 2-3 minutes until they just start to turn pink. Remove the shrimp from the skillet and set aside.
Cook the Garlic: In the same skillet, add the minced garlic and crushed red pepper flakes (if using), and sautΓ© for about 30 seconds until fragrant. Be careful not to burn the garlic.
Deglaze with Wine: Add the white wine to the skillet, scraping up any brown bits from the bottom of the pan. Allow the wine to simmer and reduce by half, about 2 minutes.
Finish the Sauce: Stir in the lemon juice and the remaining 2 tablespoons of butter. Once the butter has melted and the sauce has thickened slightly, return the shrimp to the skillet and toss to coat in the sauce.
Serve: Remove the skillet from heat and stir in the fresh parsley. Serve the shrimp scampi immediately over cooked pasta or with crusty bread to soak up the delicious sauce. Garnish with lemon wedges.
