Albondigas 🍖

Ingredients:

1 lb ground beef
1/2 lb ground pork
1/2 cup breadcrumbs
1/4 cup milk
1 egg
3 cloves garlic, minced
1/4 cup fresh parsley, chopped
1 teaspoon smoked paprika
Salt and pepper to taste
2 tablespoons olive oil
1 onion, finely chopped
1 can (14 oz) crushed tomatoes
1/2 cup beef broth
1 bay leaf
1 teaspoon sugar (optional)
Fresh parsley for garnish

Directions:

In a large bowl, combine the ground beef, ground pork, breadcrumbs, milk, egg, minced garlic, parsley, smoked paprika, salt, and pepper. Mix well until all ingredients are evenly combined.
Shape the mixture into small meatballs, about 1 inch in diameter.
Heat olive oil in a large skillet over medium heat. Add the meatballs in batches and cook until browned on all sides, about 6-8 minutes. Remove the meatballs and set aside.
In the same skillet, add the chopped onion and sauté until softened, about 5 minutes.
Add the crushed tomatoes, beef broth, bay leaf, and sugar (if using). Stir well and bring the sauce to a simmer.
Return the meatballs to the skillet, cover, and simmer for 20 minutes until the meatballs are cooked through and the sauce has thickened.
Remove the bay leaf, garnish with fresh parsley, and serve warm.
