Beef Enchilada Recipe

Delicious and easy Beef Enchilada recipe that’s perfect for a hearty, flavorful meal!

Ingredients:

For the Beef Filling:
1 lb ground beef
1 small onion (diced)
2 cloves garlic (minced)
1 tbsp olive oil
1 tsp ground cumin
1 tsp chili powder
1/2 tsp paprika
Salt and pepper to taste
1/2 cup canned black beans (drained and rinsed, optional)
1/2 cup frozen corn (optional)
For the Enchiladas:
8-10 medium flour or corn tortillas
2 cups shredded cheddar or Mexican blend cheese
1 can (10 oz) enchilada sauce (store-bought or homemade)
1/4 cup chopped cilantro (for garnish)
Sliced jalapeños (optional for topping)
Sour cream (optional for serving)

Instructions:

  1. Prepare the Beef Filling:
    Heat olive oil in a large skillet over medium heat. Add the diced onion and sauté for 3-4 minutes until softened.
    Add the garlic and cook for another 30 seconds.
    Add the ground beef to the skillet, breaking it up with a spoon, and cook until browned, about 6-8 minutes. Drain excess fat.
    Stir in the cumin, chili powder, paprika, salt, and pepper. Cook for another 2 minutes to allow the spices to blend in.
    If you’re using black beans and corn, stir them into the beef mixture and cook for another 2 minutes. Remove from heat.
  2. Assemble the Enchiladas:
    Preheat the oven to 375°F (190°C).
    Spread 1/2 cup of the enchilada sauce on the bottom of a greased 9×13-inch baking dish.
    Take one tortilla, add a few spoonfuls of the beef mixture to the center, and sprinkle with cheese. Roll up the tortilla and place it seam-side down in the baking dish.
    Repeat with the remaining tortillas and beef mixture, lining them up in the dish.
  3. Top with Sauce and Cheese:
    Pour the remaining enchilada sauce over the rolled tortillas, making sure they are evenly covered.
    Sprinkle the rest of the shredded cheese on top.
  4. Bake:
    Cover the dish with foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 5-10 minutes, or until the cheese is bubbly and golden.
  5. Serve:
    Remove from the oven and let the enchiladas cool for a few minutes. Garnish with chopped cilantro and sliced jalapeños if desired.
    Serve with sour cream on the side.
