Bocconcini, Tomato, and Basil Salad
Ingredients:
1 pint bocconcini (mini mozzarella balls)
2 cups cherry tomatoes, halved
1/2 cup fresh basil leaves
1/4 cup extra virgin olive oil
2 tablespoons balsamic vinegar
1 teaspoon honey
Salt and freshly ground black pepper, to taste
Optional: 1/4 cup pine nuts, toasted
Directions:
In a large bowl, combine the bocconcini, cherry tomatoes, and fresh basil leaves.
In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and black pepper until well combined.
Drizzle the dressing over the bocconcini, tomatoes, and basil mixture, and toss gently to coat everything evenly.
If using, sprinkle toasted pine nuts over the salad before serving.
Serve immediately or refrigerate for up to an hour before serving to allow the flavors to meld.
