Braised Short Ribs 🍖

Ingredients:
4 pounds beef short ribs
Salt and black pepper, to taste
2 tablespoons vegetable oil
1 large onion, chopped
2 carrots, chopped
2 celery stalks, chopped
4 cloves garlic, minced
1 cup red wine
2 cups beef broth
1 tablespoon tomato paste
2 bay leaves
1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
1 teaspoon fresh rosemary leaves (or 1/2 teaspoon dried rosemary)
1 tablespoon all-purpose flour (optional, for thickening)
2 tablespoons chopped fresh parsley (for garnish)
Directions:
Preheat Oven and Prepare Ribs:
Preheat your oven to 325°F (160°C).
Season the short ribs generously with salt and black pepper.
Sear the Ribs:
Heat vegetable oil in a large ovenproof pot or Dutch oven over medium-high heat.
Add the short ribs and sear on all sides until browned, about 4-5 minutes per side. Remove the ribs and set aside.
Sauté Vegetables:
In the same pot, add the chopped onion, carrots, and celery. Sauté until the vegetables are softened, about 5 minutes.
Add the minced garlic and cook for an additional 1 minute.
Deglaze and Braise:
Pour in the red wine and bring to a boil, scraping up any browned bits from the bottom of the pot.
Stir in the beef broth, tomato paste, bay leaves, thyme, and rosemary. Return the short ribs to the pot.
Bring the liquid to a simmer.
Braise the Ribs:
Cover the pot with a lid and transfer it to the preheated oven.
Braise the short ribs for 2.5 to 3 hours, or until the meat is tender and falls off the bone.
Thicken the Sauce (Optional):
Remove the ribs from the pot and set aside.
If desired, remove the bay leaves and discard. Simmer the sauce over medium heat to reduce it slightly.
To thicken the sauce, mix 1 tablespoon of flour with 2 tablespoons of water to form a slurry. Stir it into the simmering sauce and cook for a few minutes until thickened.
Serve:
Return the short ribs to the pot and coat with the sauce.
Garnish with chopped fresh parsley before serving.
