Butter Tart Squares 🍯
Ingredients:
For the Crust:
1 1/2 cups all-purpose flour
1/4 cup granulated sugar
1/2 cup unsalted butter, cold and cut into small pieces
1/4 teaspoon salt
For the Filling:
1 cup brown sugar, packed
1/2 cup corn syrup
1/4 cup unsalted butter, melted
2 large eggs
1 teaspoon vanilla extract
1/2 cup chopped pecans or walnuts (optional)
1/4 cup raisins (optional)
Directions:
Prepare the Crust:
Preheat your oven to 350°F (175°C).
In a medium bowl, combine the flour, sugar, and salt. Add the cold butter pieces and use a pastry cutter or your fingers to work the butter into the dry ingredients until the mixture resembles coarse crumbs.
Press the mixture evenly into the bottom of an 8-inch square baking pan lined with parchment paper.
Bake the Crust:
Bake the crust in the preheated oven for 10-12 minutes, or until lightly golden.
Prepare the Filling:
In a large bowl, whisk together the brown sugar, corn syrup, melted butter, eggs, and vanilla extract until smooth and well combined.
Stir in the chopped pecans or walnuts and raisins if using.
Assemble and Bake:
Pour the filling over the partially baked crust, spreading it evenly.
Return the pan to the oven and bake for an additional 25-30 minutes, or until the filling is set and the top is golden brown.
Cool and Cut:
Allow the bars to cool completely in the pan before lifting them out using the parchment paper. Cut into squares.
