California Roll 🍣
Ingredients:
2 cups sushi rice
2 1/2 cups water
1/4 cup rice vinegar
1 tablespoon sugar
1/2 teaspoon salt
4 sheets of nori (seaweed)
1/2 lb imitation crab meat, shredded
1 avocado, sliced
1 cucumber, julienned
Soy sauce for serving
Pickled ginger for serving
Wasabi for serving
Directions:
Rinse sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker and cook according to the manufacturer’s instructions.
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, gently fold in the vinegar mixture and let the rice cool to room temperature.
Place a sheet of nori, shiny side down, on a bamboo sushi mat. With wet hands, spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top.
Arrange a line of shredded imitation crab, avocado slices, and cucumber along the center of the rice.
Carefully roll the sushi mat, starting from the bottom edge, and tightly roll up the sushi. Apply gentle pressure to shape the roll.
Use a sharp knife to slice the roll into 6-8 pieces. Repeat with remaining ingredients.
Serve with soy sauce, pickled ginger, and wasabi.
