Canelones 🧀
Ingredients:
12-15 cannelloni tubes
2 tablespoons olive oil
1 onion, chopped
2 cloves garlic, minced
1 pound ground beef
1 cup ricotta cheese
1 cup grated mozzarella cheese
1/2 cup grated Parmesan cheese
1 cup frozen spinach, thawed and drained
1 egg
1 jar (about 24 ounces) marinara sauce
Salt and pepper to taste
Fresh basil, chopped (for garnish)
Directions:
Preheat the oven to 375°F (190°C). Cook the cannelloni tubes according to package instructions until al dente. Drain and set aside.
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened, about 5 minutes.
Add the ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks. Season with salt and pepper. Drain any excess fat.
In a large bowl, combine the cooked beef mixture, ricotta cheese, mozzarella cheese, Parmesan cheese, spinach, and egg. Mix until well combined.
Spread a thin layer of marinara sauce on the bottom of a baking dish. Stuff each cannelloni tube with the cheese and meat mixture.
Arrange the stuffed cannelloni in the baking dish, then cover with the remaining marinara sauce.
Bake in the preheated oven for 25-30 minutes, or until the sauce is bubbling and the top is golden brown.
Garnish with fresh basil before serving.
