Ceviche 🍤
Ingredients:
1 lb fresh shrimp, peeled and deveined
1 cup freshly squeezed lime juice
1/2 cup red onion, finely chopped
1/2 cup cherry tomatoes, diced
1 cucumber, peeled and diced
1 jalapeño, seeded and minced
1/4 cup fresh cilantro, chopped
1 avocado, diced
Salt and pepper to taste
Tortilla chips or plantain chips for serving
Directions:
Bring a pot of water to a boil. Add the shrimp and cook for 2-3 minutes, or until pink and opaque. Remove from the pot and transfer to an ice bath to cool. Drain and chop into bite-sized pieces.
In a large bowl, combine the shrimp with lime juice. Let it marinate for about 30 minutes in the refrigerator to allow the flavors to meld and the shrimp to “cook” in the citrus.
Add the red onion, cherry tomatoes, cucumber, jalapeño, and cilantro to the shrimp mixture. Stir gently to combine.
Just before serving, fold in the diced avocado. Season with salt and pepper to taste.
Serve chilled with tortilla chips or plantain chips on the side.
