Ceviche🐟🍋
Ingredients:
1 pound fresh white fish (such as snapper, sea bass, or tilapia), diced
1/2 cup fresh lime juice
1/2 cup fresh lemon juice
1/4 cup fresh orange juice
1 red onion, thinly sliced
1 jalapeño pepper, seeded and finely chopped
1/2 cup fresh cilantro, chopped
1 tomato, diced
1/2 cucumber, diced
Salt and pepper to taste
1 avocado, sliced, for garnish
Tortilla chips, for serving
Directions:
In a large glass or ceramic bowl, combine the diced fish with lime juice, lemon juice, and orange juice. Stir to ensure the fish is fully submerged in the citrus juices. Cover the bowl and refrigerate for 30 minutes to 1 hour, until the fish turns opaque and is “cooked” by the acid in the citrus juice.
Drain the fish, reserving about 1/4 cup of the citrus marinade.
In a separate bowl, combine the marinated fish with red onion, jalapeño, cilantro, tomato, and cucumber. Add the reserved citrus marinade and toss gently to mix.
Season with salt and pepper to taste.
Serve the ceviche chilled, garnished with slices of avocado and tortilla chips on the side.
