Chia & Mixed Berry Yogurt Parfait

Ingredients:

For the Parfait:
1/2 cup chia seeds
1 1/2 cups Greek yogurt (plain or vanilla)
1 cup mixed berries (strawberries, blueberries, raspberries)
2 tablespoons honey or maple syrup (optional for sweetness)
1/2 cup granola (for topping)
1 tablespoon chia seeds (for topping)
Fresh mint leaves (for garnish, optional)

Directions:

Prepare the Chia Seeds:

In a medium bowl, mix chia seeds with 1 cup of water. Stir well to prevent clumping.
Let it sit for about 10 minutes, then stir again to ensure the seeds are evenly distributed. Cover and refrigerate for at least 2 hours or overnight to allow the chia seeds to expand and form a gel-like consistency.

Prepare the Yogurt Layer:

In a separate bowl, mix the Greek yogurt with honey or maple syrup if using. This adds a touch of sweetness to the yogurt.

Assemble the Parfait:

In serving glasses or bowls, start by layering the chia seed mixture.
Add a layer of Greek yogurt on top of the chia seeds.
Add a layer of mixed berries over the yogurt.

Add the Granola and Garnish:

Sprinkle granola on top of the berries for a crunchy texture.
Garnish with a few extra chia seeds and fresh mint leaves if desired.

Serve:

Serve immediately or refrigerate until ready to enjoy. This parfait is great for breakfast, a snack, or a light dessert!
