Corned Beef Hash
This is a classic corned beef hash with potatoes and onions. It’s great on its own, but even better with eggs!
Ingredients:
2 cups cooked corned beef, diced
4 large russet potatoes, peeled and diced
1 medium onion, finely chopped
3 tablespoons unsalted butter
2 tablespoons olive oil
2 cloves garlic, minced
1/4 cup fresh parsley, chopped
Salt and freshly ground black pepper to taste
4 large eggs (optional)
Directions:
Prepare the Potatoes: In a large pot, bring salted water to a boil. Add the diced potatoes and cook for about 5 minutes, until just tender but not falling apart. Drain and set aside.
Sauté Onions and Garlic: Heat the butter and olive oil in a large skillet over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Add the minced garlic and cook for another minute.
Cook the Hash: Increase the heat to medium-high. Add the diced corned beef and potatoes to the skillet, spreading them out in an even layer. Cook without stirring for 5-7 minutes, until the bottom is crispy and golden brown. Flip the mixture in sections and cook the other side until crispy.
Season and Serve: Season with salt and freshly ground black pepper. Stir in the chopped parsley. If desired, fry the eggs separately and serve them on top of the hash.
