Maryland Crab Cakes with Quick Tartar Sauce

Maryland Crab Cakes

Ingredients:

1 pound fresh crab meat, picked over for shells
1/2 cup mayonnaise (Tartar Sauce)
1 egg, beaten
1 tablespoon Dijon mustard
1 tablespoon fresh lemon juice
1 tablespoon fresh parsley, chopped
1/2 teaspoon Old Bay seasoning
1/4 teaspoon paprika
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/2 cup breadcrumbs
2 tablespoons vegetable oil (for frying)
Lemon wedges (for serving)

Directions:

In a large bowl, combine the crab meat, mayonnaise, beaten egg, Dijon mustard, lemon juice, parsley, Old Bay seasoning, paprika, garlic powder, and onion powder. Gently mix until well combined.
Fold in the breadcrumbs until the mixture holds together when shaped. If the mixture is too wet, add a bit more breadcrumbs.
Form the mixture into 8-10 small patties, about 1/2 inch thick.
Heat vegetable oil in a large skillet over medium heat.
Cook the crab cakes for 3-4 minutes on each side, or until golden brown and crispy.
Remove from the skillet and drain on paper towels.
Serve warm with lemon wedges.
