Delicious recipe for Lollipops with Chocolate Filling using a straw as the stick!

Ingredients:

For the Lollipops:

1 cup sugar
1/4 cup water
1/4 cup corn syrup (or honey)
1/2 tsp flavored extract (like vanilla, strawberry, or mint)
Food coloring (optional)

For the Chocolate Filling:

1/2 cup dark or milk chocolate (melted)
1 tbsp heavy cream or butter (optional, for a creamier filling)

Other Items:

Paper straws or lollipop sticks
Lollipop molds (or use a silicone mat and shape-freehand)

Instructions:

  1. Prepare the Chocolate Filling:
    Melt the chocolate in a microwave-safe bowl in 30-second intervals, stirring between each interval until smooth. Stir in the heavy cream or butter for a creamier texture.
    Pour the melted chocolate into a piping bag or a zip-top bag (with a corner cut off) and set aside.
  2. Make the Lollipops:
    In a saucepan, combine sugar, water, and corn syrup. Heat over medium heat, stirring occasionally, until the sugar dissolves.
    Once dissolved, stop stirring and allow the mixture to boil until it reaches 300°F (hard crack stage) on a candy thermometer.
    Remove from heat, stir in your flavored extract, and add a few drops of food coloring if desired.
  3. Assemble the Lollipops:
    Pour the hot sugar mixture into the lollipop molds, filling them halfway.
    Quickly pipe a small amount of melted chocolate into the center of each lollipop.
    Cover the chocolate with more of the sugar mixture to fully enclose the filling.
    Insert the straws or lollipop sticks into each mold while the candy is still soft.
  4. Cool and Serve:
    Allow the lollipops to cool and harden completely (about 30 minutes).
    Once set, remove them from the molds and enjoy your Lollipops with Chocolate Filling!
