Ingredients:
2 racks of baby back ribs (or St. Louis-style ribs)
¼ cup yellow mustard (for coating the ribs)
2 tablespoons olive oil
For the Dry Rub:
¼ cup brown sugar
2 tablespoons paprika
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon chili powder
1 teaspoon black pepper
1 teaspoon salt
1 teaspoon cayenne pepper (optional, for heat)
1 teaspoon cumin
For the Barbecue Sauce:
1 cup ketchup
¼ cup apple cider vinegar
¼ cup brown sugar
2 tablespoons Worcestershire sauce
1 tablespoon mustard
1 tablespoon smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
Instructions:
- Prepare the Ribs:
Preheat your oven to 275°F (135°C).
Remove the membrane from the back of the ribs by sliding a knife under it and pulling it off using a paper towel for grip.
Rub the ribs with olive oil, then coat them with a thin layer of mustard. This helps the dry rub stick and adds flavor. - Apply the Dry Rub:
In a small bowl, mix together all the dry rub ingredients.
Generously coat both sides of the ribs with the dry rub, pressing it into the meat. - Bake the Ribs:
Wrap the ribs tightly in aluminum foil, making sure they are fully sealed to lock in the moisture.
Place the wrapped ribs on a baking sheet and bake for 2.5 to 3 hours, until the ribs are tender and the meat is pulling away from the bones. - Make the Barbecue Sauce:
While the ribs are baking, combine all the barbecue sauce ingredients in a saucepan.
Simmer the sauce over medium heat for 10-15 minutes, stirring occasionally, until it thickens slightly. - Grill or Broil for Finishing:
Once the ribs are done baking, remove them from the oven and carefully unwrap them.
Brush the ribs generously with the barbecue sauce.
If you have a grill, preheat it to medium-high heat and grill the ribs for 5-10 minutes on each side, brushing more sauce as they cook, until they develop a nice char.
If using an oven, set your broiler to high and broil the ribs for 3-5 minutes, watching carefully, until the sauce becomes sticky and caramelized. - Serve:
Let the ribs rest for a few minutes before slicing them between the bones.
Serve with extra barbecue sauce on the side.
