Crispy Fried Calamari

Ingredients:

For the Calamari:

1 pound calamari rings (fresh or thawed)
1 cup buttermilk
1 cup all-purpose flour
1 cup cornmeal
1 teaspoon paprika
1 teaspoon garlic powder
1/2 teaspoon cayenne pepper (optional, for heat)
Salt and black pepper to taste
Vegetable oil for frying

For the Dipping Sauce:

1/2 cup marinara sauce or marinara-based dipping sauce
1 tablespoon lemon juice
1/2 teaspoon dried oregano (optional)
Fresh lemon wedges for serving

Directions:

Prepare the Calamari:

Place the calamari rings in a bowl and cover them with buttermilk. Let them marinate in the refrigerator for at least 30 minutes.

Prepare the Breading:

In a large bowl, combine the flour, cornmeal, paprika, garlic powder, cayenne pepper (if using), salt, and black pepper. Mix well.

Bread the Calamari:

Remove the calamari from the buttermilk, allowing any excess to drip off.
Dredge the calamari rings in the flour mixture, coating them thoroughly. Shake off any excess flour.

Heat the Oil:

Pour vegetable oil into a deep pan or fryer to a depth of about 2 inches. Heat the oil to 350°F (175°C).

Fry the Calamari:

Carefully add a few calamari rings at a time to the hot oil, avoiding overcrowding. Fry for 2-3 minutes, or until golden brown and crispy.
Use a slotted spoon to transfer the fried calamari to a paper towel-lined plate to drain any excess oil.

Prepare the Dipping Sauce:

In a small bowl, mix the marinara sauce with lemon juice and oregano (if using). Adjust seasoning to taste.

Serve:

Arrange the fried calamari on a serving platter. Serve with the dipping sauce and fresh lemon wedges.
