Garlic Butter Steak Bites and Mash
Ingredients:
1 lb (450g) sirloin steak, cut into bite-sized pieces
4 tablespoons unsalted butter
4 cloves garlic, minced
1 tablespoon olive oil
Salt and pepper, to taste
1 tablespoon fresh parsley, chopped (optional)
4 large potatoes, peeled and cubed
1/4 cup milk
2 tablespoons sour cream (optional)
Salt and pepper, to taste
Directions:
Prepare the Mashed Potatoes: Place the cubed potatoes in a large pot and cover with water. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes. Drain and return to the pot.
Mash the Potatoes: Add the milk, sour cream (if using), salt, and pepper to the potatoes. Mash until smooth and creamy. Keep warm.
Cook the Steak Bites: Heat olive oil in a large skillet over medium-high heat. Add the steak bites in a single layer, seasoning with salt and pepper. Cook for 2-3 minutes on each side until browned and cooked to your desired doneness. Remove from the skillet and set aside.
Make the Garlic Butter Sauce: In the same skillet, add the butter and minced garlic. Cook for 1-2 minutes until the garlic is fragrant and the butter is melted.
Combine and Serve: Return the steak bites to the skillet, tossing them in the garlic butter sauce until fully coated. Serve the steak bites over the mashed potatoes, garnishing with fresh parsley if desired.
