Georgia Vidalia Onion Pie

Ingredients:

1 pie crust (store-bought or homemade)
4 large Vidalia onions, thinly sliced
3 tablespoons unsalted butter
1 cup heavy cream
1 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
3 large eggs
1 tablespoon all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried thyme
1/4 teaspoon ground nutmeg
Fresh parsley for garnish (optional)

Directions:

Preheat your oven to 375°F (190°C).
Place the pie crust in a 9-inch pie dish and trim the edges. Set aside.
In a large skillet, melt the butter over medium heat. Add the sliced onions and cook, stirring frequently, for 20-25 minutes, or until the onions are golden brown and caramelized. Remove from heat and let cool slightly.
In a large bowl, whisk together the heavy cream, cheddar cheese, Parmesan cheese, eggs, flour, salt, pepper, thyme, and nutmeg.
Fold the caramelized onions into the cream mixture until well combined.
Pour the onion mixture into the prepared pie crust, spreading it evenly.
Bake for 35-40 minutes, or until the pie is set in the center and the top is golden brown.
Let the pie cool for a few minutes before slicing. Garnish with fresh parsley if desired.
