Lemon Bars🍋🍰

These lemon bars are simple to make and will wow your friends. Tart, rich, and delicious all rolled into one!

Ingredients:

For the crust:
1 1/2 cups all-purpose flour
1/2 cup powdered sugar
1/2 cup unsalted butter, cold and cubed
Pinch of salt
For the filling:
4 large eggs
1 1/4 cups granulated sugar
1/4 cup all-purpose flour
1/2 cup freshly squeezed lemon juice (about 2 lemons)
Zest of 1 lemon
1/2 teaspoon baking powder
Powdered sugar, for dusting

Directions:

Preheat the oven: Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving a slight overhang for easy removal.

Prepare the crust: In a medium bowl, combine the flour, powdered sugar, and salt. Add the cold, cubed butter and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs. Press the mixture evenly into the bottom of the prepared pan.

Bake the crust: Bake in the preheated oven for 15 minutes, or until lightly golden. Remove from the oven and set aside.

Prepare the filling: In a large bowl, whisk together the eggs and granulated sugar until smooth. Add the flour, lemon juice, lemon zest, and baking powder. Mix until well combined.

Add the filling: Pour the lemon filling over the baked crust and return to the oven. Bake for 20-25 minutes, or until the filling is set and slightly firm to the touch.

Cool and dust: Allow the bars to cool completely in the pan on a wire rack. Once cooled, lift the bars out of the pan using the parchment paper. Dust with powdered sugar before cutting into squares.
