Luxurious Cherry Chocolate Roll Cake

**Ingredients:**

– 4 large eggs
– 3/4 cup granulated sugar
– 1 teaspoon vanilla extract
– 1/4 cup all-purpose flour
– 1/4 cup cocoa powder
– 1/2 teaspoon baking powder
– Pinch of salt
– 1 cup heavy cream
– 2 tablespoons powdered sugar
– 1 cup cherry preserves or fresh cherries (pitted and halved)
– 1/2 cup dark chocolate, melted
– Powdered sugar, for dusting
– Fresh cherries, for garnish (optional)

**Directions:**

1. Preheat your oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper and lightly grease it.
2. In a large bowl, beat the eggs and granulated sugar together until thick and pale. Add the vanilla extract and mix well.
3. Sift together the flour, cocoa powder, baking powder, and salt. Gradually fold the dry ingredients into the egg mixture until just combined.
4. Pour the batter into the prepared pan, spreading it evenly. Bake for 10-12 minutes or until the cake springs back when lightly touched.
5. While the cake is still warm, carefully roll it up with the parchment paper inside. Let it cool completely.
6. In a separate bowl, whip the heavy cream and powdered sugar together until stiff peaks form.
7. Once the cake is cooled, gently unroll it and spread a layer of cherry preserves or fresh cherries over the cake, followed by a layer of whipped cream.
8. Roll the cake back up (without the parchment paper), then drizzle the melted dark chocolate over the top.
9. Dust the cake with powdered sugar and garnish with fresh cherries if desired.
