Maryland Crab Soup ! 🦀🍲

Ingredients:

1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
1 celery stalk, chopped
1 carrot, chopped
1 bell pepper, chopped
1 cup corn kernels (fresh or frozen)
1 can (14.5 oz) diced tomatoes
4 cups chicken or seafood broth
1 cup heavy cream
1 tablespoon Old Bay seasoning
1 pound lump crabmeat, picked over for shells
2 tablespoons fresh parsley, chopped
Salt and pepper to taste

Directions:

Heat olive oil in a large pot over medium heat. Add the onion, garlic, celery, carrot, and bell pepper. Cook for 5-7 minutes, or until the vegetables are tender.
Stir in the corn, diced tomatoes, and broth. Bring the mixture to a boil, then reduce the heat and let it simmer for 15 minutes.
Add the heavy cream and Old Bay seasoning to the pot, stirring to combine. Simmer for an additional 5 minutes.
Gently fold in the crabmeat, cooking just until heated through. Adjust seasoning with salt and pepper to taste.
Garnish with fresh parsley before serving.
