Mofongo🌱🥩
Ingredients:
4 green plantains, peeled and sliced into 1-inch rounds
1/2 pound pork cracklings (chicharrón), finely chopped
4 cloves garlic, minced
1/4 cup olive oil
1 teaspoon salt
1/2 teaspoon black pepper
2 cups chicken broth (for serving)
Fresh cilantro, chopped (for garnish)
Directions:
In a large pot, bring salted water to a boil. Add the sliced plantains and cook for about 10 minutes or until tender. Drain and set aside.
In a large mortar and pestle or a sturdy mixing bowl, mash the garlic with the salt until it forms a paste.
Add the cooked plantains to the garlic paste, along with the chopped pork cracklings. Gradually add the olive oil while continuing to mash the mixture until smooth and well combined.
Season with black pepper, adjusting salt if needed.
Shape the mashed plantain mixture into small balls or mounds and place them on a serving plate.
Serve the mofongo hot with a side of warm chicken broth for drizzling or dipping. Garnish with fresh cilantro if desired.
