New York strip steak with fries and salad:
Also known as Kansas City steak, boneless cut steak or ambassador steak, the New York strip is prized for its buttery flavor and low fat content. If you know how to cook steak in a conventional oven, you’ll find it easy to roast or broil this cut of meat.
Ingredients (for 2 people):
For the New York strip steak:
2 New York strip steaks
2 tablespoons olive oil
2 cloves garlic, crushed
1 sprig fresh rosemary (optional)
Salt and freshly ground black pepper
For the fries:
4 potatoes (russet or bintje type)
Frying oil (sunflower or peanut oil)
Salt
For the salad:
1 romaine or batavia lettuce
1 tomato
1/2 cucumber
1 red onion (optional)
Balsamic or cider vinegar
Olive oil
Salt and pepper
Preparation:
- Preparation of the fries:
Peel the potatoes and cut them into sticks to form fries.
Soak in cold water for 30 minutes to remove excess starch.
Dry the fries well before plunging them into the hot oil (170°C).
Cook until lightly browned, then remove and let rest for a few minutes.
Heat the oil to 190°C, dip the fries again to make them crispy and golden.
Drain on paper towels and season with salt. - Prepare the steak:
Remove the steaks from the refrigerator about 30 minutes before cooking to allow them to reach room temperature.
Season generously with salt and pepper on each side.
Heat the olive oil in a cast iron skillet or heavy skillet over high heat.
Add the garlic and rosemary to the pan to flavor the oil.
Cook the steaks for 3 to 4 minutes on each side for rare (longer depending on desired doneness).
Remove the steaks, cover with aluminum foil and let rest for 5 minutes before serving. - Salad preparation:
Wash and spin the salad.
Slice the tomato, cucumber and red onion into thin slices.
Toss the salad with the vegetables.
Prepare a simple vinaigrette with 2 tablespoons of olive oil, 1 tablespoon of balsamic or cider vinegar, salt and pepper.
Drizzle the vinaigrette over the salad just before serving.
Preparation:
Serve the steaks with the crispy fries on the side.
Arrange the fresh salad on the side for a balanced meal.
