Ingredients:

  • 1½ lb (700g) beef steak (ribeye, sirloin, or filet mignon)
  • 1 tablespoon whole black peppercorns (coarsely crushed)
  • 2 large onions (thinly sliced)
  • 3 tablespoons butter
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons heavy cream (optional, for sauce)
  • Salt to taste
  • Fresh parsley (chopped, for garnish)

Instructions:

1. Prepare the Beef:
  • Pat the beef steaks dry with a paper towel.
  • Press the crushed peppercorns onto both sides of the steaks, ensuring an even coating. Season lightly with salt.
2. Cook the Beef:
  • Heat 1 tablespoon of olive oil in a skillet over medium-high heat.
  • Sear the steaks for 3-4 minutes on each side, depending on your preferred doneness (rare, medium, etc.).
  • Remove the steaks from the skillet and set aside to rest.
3. Caramelize the Onions:
  • In the same skillet, add 2 tablespoons of butter and the remaining olive oil.
  • Add the sliced onions and a pinch of salt, cooking over medium-low heat.
  • Stir the onions occasionally, allowing them to caramelize for about 20-25 minutes. They should be soft, golden brown, and slightly sweet.
  • Stir in the balsamic vinegar for extra flavor, and cook for another 2 minutes.
4. Make the Sauce (Optional):
  • If you want a creamy sauce, after removing the onions, add heavy cream to the skillet and whisk until combined. Let it simmer for 2-3 minutes to thicken slightly.

5. Serve:

  • Place the caramelized onions on top of the steaks.
  • Garnish with fresh parsley and serve with your favorite sides like mashed potatoes, sautéed vegetables, or a simple salad.
